Pina Colada Zucchini Bread

1 teaspoon ing soda
1 teaspoon onut extract
1 spoon rum extract
1 teaspoon illa extract
3 cups shredded chini
1 cup crushed eapple (drained)
1/2 cup chopped nuts

Combine the eggs, flour, sugar, baking powder, baking soda and salt. In another bowl, mix the eggs, oil and extracts. Stir into dry ingredients. Add zucchini, pineapple and walnuts. Grease and flour the bottom of the pan and line with waxed paper (or use cupcake papers in a muffin tin). Add mixture to pan and bake at 350 for 45 - 55 minutes or until a toothpick comes clean. Cool for 10 minutes before removing from pan. This recipe will fill three 8x4" pans or about 24 muffins.
