Seared Filet Mignon

6 sl Filet Mignon,, each about
Salt and per
1/3 c (6 tablespoons) ter
1 1/2 tb ve oil

Season the Filet Mignons with salt and pepper. Combine the butter and oil in a large saute pan over high heat. When the pan is hot and foam has subsided, add the beef. Sear for three minutes per side for rare. 4 filet mignon aks
1 tablespoon ve oil
salt and per
1/2 cup th
2 tablespoons unsalted ter
1 teaspoon on juice

Leave steaks out to bring to room tempature. Trim excess fat and pat dry with paper towels. Place frying pan over med high heat. When pan is hot, add olive oil and heat until hot but not smoking. Add the steaks. Turning as needed about 10 min. Transfer steaks to warm plate and cover with aluminum foil. Add butter to pan juices and cook until melted and then add lemon juice and broth and cook until reduced to about 1/4 cup. Pour sauce over the steaks.
