Erica's Chicken A La King

Main Dish Quick Low Fat Chicken Uncategorized

1/4 cup on finely chopped
1/4 cup ery finely chopped
1/4 cup Green per finely chopped
1/4 cup ento chopped
4 ounces hroom stems and pieces drained
3 cups cken cooked and cubed
1/2 teaspoon soned Salt I used Cavanders
1/8 teaspoon per
1 can (10 oz) am of Mushroom Soup
1 can (12 oz) porated milk
4 cups e
2 tablespoon ter

Cook rice according to directions. (2 cups of dry, non-instant rice should make about 4 cups of cooked rice) In the appropriate sized frying pan, dice chicken and cook until center is not pink. Set aside. Melt butter in pan. Saute Onion, Celery and Green Pepper until onion is soft. In 2 qt. saucepan mix together evaporated milk and cream of mushroom soup. Add all remaining ingredients except the rice and heat over medium heat until mixture reaches desired temperature Serve over rice and enjoy!

Erica's Ham and Bean Soup

3/4 pound Cooked ham ed
1 medium on chopped
2 cloves lic minced
2 tablespoon ter
2 can (16oz) Great Northern ns rinsed and drained
3 cups Ham ppings
2 cup Water
1 cup ato peeled and diced
3/4 cup rot diced
3/4 cup ery diced
1/4 teaspoon per
1/2 cup Frozen s

Saute ham, onion and garlic in butter until union is tender. Add everything else except peas and simmer for 30 minutes. Add peas and cook for 5 minutes. I had just baked a ham when I made this so I had the drippings that had collected in the bottom of the roasting pan. If you do not have that available then substitute 3 cups of chicken broth for the ham drippings.
