Chicken Stir- Fry

chicken gingerroot celery Stir Fry healthy Low Fat Chicken Canadian

1 1/2 lb skinless cken breasts
2 tbs ve oil
2 tbs minced fresh gerroot
6 cups ccoli (florets and sliced spears)
1 cup thinly sliced rots
2 cup sliced ery
2 ons sliced (optional)
3/4 cup cken stock
2 tbs rry
2 ts sauce
2 ts nstarch
2 tbs water

Cut chicken into cubes. Heat Oil in wok or skillet. Add chicken with 1/2 of gingerroot; stir fry for 4 minutes. remove from wok. Stir-fry broccoli, carrots, celery and remaining gingerroot for 2 minutes. If necessary add a little water to prevent from sticking. Mix chicken stock, sherry and soy sauce; pour over mixture. Cover and steam for 2 minutes. Stir in onion and chicken. Mix cornstarch with water; add to vegetables and bring to boil.

Zippy Stir Fry

3 tablespoons of ve oil
2 small ons
1/2 head of ccoli
1 pepper
1 green per
1 Optional(for color) yellow or orange per
2 boneless skinless cken breast (1 1/2 cubes)
1 teaspoon of ck pepper
6 oz. ZipSauce

In saute pan heat 3 tablespoons of olive oil. Add and sear chicken cubs on all sides Add all vegetables Sprinkle on black pepper Saute for 10 minutes Add 6 oz of ZipSauce and saute for an additional 5 min.

4 tablespoons of garlic infused ve oil
2 tablespoons chopped lic
3 cken breasts cut into 1/2" strip
1 yellow on chopped
10 leaves chopped
2/3 cup sugar p peas chopped
10 oz y spinach
1/2 cup wine
1/4 cup sauce
1 tablespoon on juice

Use a large saute pan (4 - 6 quart sized). Heat 2 tablespoons oil with 2 tablespoons garlic over med heat until the oil is rippling. Add chicken to the pan and cook for about 5 minutes until almost cooked through (still rare). Add chopped onion, basil, wine, and soy sauce and continue cooking for about 3 more minutes. Add more wine if you want and let reduce until the liquid starts to thicken. Add the sugar snap peas, spinach, wine, soy sauce, lemon juice. Pour the remaining 2 tablespoons of oil over the spinach. Salt and pepper to taste. Cook until the spinach is just wilted (pay attention - the spinach will cook quickly). Remove from heat immediately and serve.
