Cook potatoes and carrot in boiling water 5 minutes; drain. Heat oil in a 10-inch cast iron skillet over medium-high heat, swirling to coat bottom of pan. Add potatoes and carrots; saute 5 minutes. Add remaining ingredients; saute 10 minutes or until tender. 1 cup dry ad crumbs
1/4 cup mesan cheese
1 pinch chopped sley

Preheat oven to 400 degrees. In 13x9 pan, melt butter and add garlic. In another bowl combine dry ingredients. Dip chicken in butter to coat then dip into dry ingredients. Place chicken back into butter pan skin side up. Bake 1 hour, or until done.

1 pound k tenderloin, trimmed
1/2 cup ad crumbs dry, preferably whole wheat
1 teaspoon ar
1/2 teaspoon rika
1/2 teaspoon on powder
1/2 teaspoon t
4 teaspoons ola Oil
1 large white lightly beaten
4 teaspoons nstarch
Preheat oven to 400?F. Coat a rimmed baking sheet with cooking spray. Holding a chef's knife at a 45? angle and perpendicular to the tenderloin, slice the pork into four long, thin "fillets" Mix breadcrumbs, sugar, paprika, onion powder and salt in a shallow dish. Drizzle with oil and mash with fork until the oil is thoroughly incorporated. Lightly beat egg white with a fork in another shallow dish. Sprinkle cornstarch over the pork slices and pat to coat evenly on both sides. Dip the pork into the egg then press into the breading mixture until evenly coated on bith sides. (Discard leftover mixture.) Place the pork on the prepared baking sheet. Bake until just parely pink in the center and an instant-read thermometer registers 145?, 14 to 16 minutes. Do not overbake or you'll be serving hockey pucks.
