Indian Yogurt Raita Cucumber Indian Dish Side Dish
3 cups natural plain urt
2 cup chopped umber
2 tsp. t
1 tsp. in
2 tsp. chopped antro
1 green chili (optional)
Pour yoghurt and cucumber in to bowl. Mix. Add salt and cumin. Stir. Stir green chili and cilantro OR place on top after stir, for design.

Strawberry Cucumber Salad

1/3 cup slivered onds toasted
2 tbsp seedless awberry jam
1 tbsp green ve oil
2 tsp samic vinegar
1 tsp on mustard
3 cups diced English umber
1 cup slices fresh awberries
2 tbsp chopped fresh t
1 salt and freshly ground ck pepper
Toast the almonds either in a skillet or toaster oven, stirring frequently to avoid burning. Next, whisk together the jam, olive oil, balsamic vinegar and Dijon mustard (honey Dijon also works). Add the cucumber, strawberries, mint and toasted almonds, and toss to combine. Season to taste with salt and black pepper. Serve on a bed of Romaine or red leaf lettuce. Other variations include adding roasted pine nuts, walnuts or pecans. Try adding 1/4 cup cold, dry sparkling wine. Chicken or crab are also good additions.

SERVES 4 VEGAN The cucumber sandwich is the aristocrat of the tea table; cool, gracious and proper. Here, its given a rambunctious twist with the addition of horseradish and peppery arugula or watercress. In small bowl, mix soy mayonnaise or yogurt cheese, and horseradish. Spread half the bread slices with soy mayonnaise mixture and cover with cucumber slices. Top with sprigs of arugula or watercress and season with salt and pepper. Cover with remaining bread slices and apply firm but delicate pressure with the palm of your hand. Cut each sandwich into four triangles. Soak rings in lime and water 24 hours. Drain and wash thoroughly in cold water. Pour cold water over rings. Let stand 3 hours or longer. Drain and add: 1 cup vinegar 1/2 oz red food color 1 tsp. alum water to cover Heat and simmer 2 hours. Drain off liquid. Make syrup of: 3 cups vinegar 3 cups water 15 cups sugar 12 cinnamon sticks 1 small package cinnamon red hots. Boil syrup and pour over rings. Let stand over night then stir lightly. Rest for next 3 days, and drain off syrup and heat to boil and pour back over the rings. On the 4th day, heat rings and syrup together to boiling point. Seal in hot jars. July 2003
