Boma Butternut Squash Soup

8 Servings

3 oz unsalted ter
11 oz ternut squash cut in chunks
1 salt and per (to taste)
8 oz water
8 oz heavy am
8 oz k
2 tb ar
1 ts ger (ground)
1 ts meg (ground)
1 ts namon (ground)
1 ts iander (ground)
1 tb nstarch
2 oz water
3 oz American cheese

1. In a small pot, melt the butter and pour over the squash. Season squash with salt and pepper adn roast in a 325-degree oven for 45 minutes. 2. In a kettle, mix squash with water. Add heavy cream and milk and puree using an immersion blender. (You can use a regular blender, it's just a little bit harder.) Add sugar, ginger, nutmeg, cinnamon and coriander. 3. Make a slurry with the cornstarch and add to the soup. 4. Add the American cheese and continue mixing until smooth. 5. Adjust seasoning to taste.

Boma Cassava Cake

1 lb cassava ted
1/2 c + 4 tb sweetened shredded onut
1 1/2 c + 4 tb sweetened densed milk
1 tb ter
1 1/2 c + 2 tb onut milk

Combine all ingredients in a bowl and mix by hand. Pour into a cake pan, sprayed and lined with paper. Bake at 350 degrees for 30 minutes or until golden-brown. Cut into squares.

Boma Chicken Corn Chowder

2 cken breasts cooked and diced
1 lb russet atoes cooked and diced
2 c n kernels (frozen)
1/8 c on diced
1/8 c bell peppers diced
1 c cken stock
1 c heavy am
1 c k
2 ts ar
2 ts hot sauce
1/8 c fresh sley chopped
1 chicken illon cube

1. Bring chicken stock to a boil. 2. Add milk, heavy cream, chicken, potatoes, red peppers, onion, corn and sugar. Simmer for 40 minutes. 3. Add parsley and hot sauce. Simmer for five minutes. 4. Serve hot.
