-= Ingredients =-
4 plum atoes seeded and chopped
1/2 cup finely chopped on
2 fresh chile peppers mild or hot, seeded and finely chopped
2 tablespoons chopped red or low bell pepper
1 1/2 teaspoons finely chopped fresh cilantro
1 teaspoon e juice
salt and per
Smokey antro Mayo
-= Ingredients =-
1 C o
1 TBSP e Juice
1 TBSP ey
1 TBSP cestershire Sauce
1 Clove lic Minced
1/4 TSP in
pinch t
pinch ck pepper
2 TBSP Chopped antro
1 Chipotle per Minced
-= Additional =-
6" diameter Flour tillas
Shredded tuce
ddar Cheese Slices
per Jack Cheese Slices
on, Cooked and Crumbled
-= Hamburger Prep Instructions =- In a medium sized bowl mix egg, milk, catsup, mustard, onion powder and garlic powder. Add ground meat. Mix together thoroughly. Add breadcrumbs until meat mixture no longer sticks to bowl. Make your patties about 6" in diameter, so after grilling/frying they will be approx. 5", just the right size for the tortillas. Grill or fry to your doneness, then add the cheddar and pepper jack slices on top just before you take the burger off the grill. -= Pico De Gallo Prep Instructions =- Combine ingredients in a glass or other non-reactive bowl and refrigerate for at least 30 minutes before serving. Makes about 2 cups. -= Smoky Cilantro Mayo Instructions =- Combine all ingredients, and refrigerate covered for 1 hour to develop the flavors. You can put more chipoltes in if you're a chile head but I think the key to this is to not go real hot so you don't mask the other flavors. Makes approx. 1 cup. Heat and lightly brown 2 flour tortilla's in a skillet. Build your burger by spreading some Smokey Cilantro Mayo on both tortillas (placing the mayo on both tortillas will help hold the ingredients together), then add the lettuce and crumbled bacon. Add the cheeseburger and some pico de gallo on top. Place the other tortilla on top of the pico de gallo, slice in half and chow down.

Variation of Bean Burger calling for Kidney Beans posted on Intercook by Sandee Eveland. I didnt have all the right ingredients for that recipe so experimented with black beans instead. Mix all ingredients well. Using 1/4 lb hamburger press, make four burgers. Can vary the taste with more/less spices. Preheat electric skillet to 350 degrees. Spray with vegetable spay. Fry burgers about 15 minutes, turning once or twice until surface is golden brown and burger feels "set" The consistency of these burgers "May" allow them to be grilled on bbq. Have not tried that yet. Will have son evaluate this experiment. These passed the taste test! ++ Courtesy of Dale and Gail Shipp, Columbia Md. ++ Posted to MM-Recipes Digest by "Rfm" and lt;Robert-Miles and at;usa.net and gt; on Oct 20, 98
