South Beach Egg Muffins

Egg Muffins Breakfast South Beach Diet American

10 -12 s
2 tablespoon fat free f and half
1 1/2 tsp. Spike soning
1 1/2 cups diced bacon or cooked turkey sage
2 cups grated low fat cheese (sharp ddar or feta)
3 en onions diced small.

Preheat oven to 375. Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray. In the bottom of the muffin cups layer diced meat, cheese and green onions. You want the muffin cups to be 3/4 full, with just enough room to pour a little egg around the other ingredients. Beat eggs well with the half and half (you could use milk). Pour egg into each muffin cup until it is full to the brim, nearly overflowing. Bake 25-30 minutes until muffins have risen above the rim of the muffin cups and are slightly browned and set.

5 Jalepeno pers chopped
2 c cken stock
1 cn (8-oz) ato sauce
1/2 tb Ground cummin
1/2 ts t
1/2 ts per
1/2 c Frozen green sweet peas
3 tb Veg oil

1 cup Elbow Macaroni Noodles
1 lb und turkey
1/2 cup on chopped
1/2 cup l pepper chopped
2 tbsp li powder
1 tsp in
1/2 tsp t
14 oz Diced atoes
8 oz ato sauce
4 oz Green chili
1/2 cup Water
1 cup Reduced Fat ddar cheese shredded

1. Cook the macaroni according to package directions omitting the salt, if desired; Drain. 2. Meanwhile, spray a large nonstick skillet with a nonstick spray and set over medium-high heat. Add the turkey and cook, breaking it up with a wooden spoon, until no longer pink, about 8 minutes. 3. Stir in the onion, bell pepper, chili powder, cumin and salt. Cook, stiring occasionally, until the onion is softened, about 3 minutes. 4. Add the tomatoes, tomato sauce, chiles and water. Bring to a boil. Reduce the heat and simmer, stirring occasionally, until the flavors are blended, about 10 minutes. 5. Add the macaroni and the cheese, stirring to combine.
