1 cup cken broth
2 large cken breast skinless, boneless

oil for frying

Cook chicken in 1 cup of water, 1 cup of chicken broth, salt and pepper for 20 minutes or until completely cooked and tender. Shred into small portions. Mix milk, flour, butter, salt and pepper and bring to a boil while stirring constantly. Reduce heat to low and allow the milk mixture to thicken. Mix shredded chicken with milk mixture and allow to reduce further, about 10 more minutes. Cool the mixture and add baking powder. Place in the fridge for 1-2 hours. When ready to fry, scoop small balls out and coat then in beaten eggs, then in bread crumbs. Repeat twice. Fry the chicken tenders in hot oil for 5-7 minutes or until golden brown. Drain in paper towels and serve with your favorite dipping sauce.
