1/2 c dried and ground porcini shitake (or substitute) hrooms
1/3 c wn sugar or low calorie substitute
4 tablespoon t
4 tablespoon iander seeds
2 T rika
1/4 c in seeds
2 T freshly und pepper
1 T ground hot chipotle pers
3 T ground tard
2 t und nutmeg
2 t ground r anise
2 T ground annatto seeds (optional)
Lightly roast and grind cumin and coriander seeds using a dedicated coffee grinder. You can control the hotness level by adding more or less chipotle peppers as desired. Mix all ingredients together and store in airtight jars.
