Baked Potato Salad with Honey Mustard Dressing

4 pounds Baby New atoes halved
1 pound on diced
1 whole bell pepper diced
1 whole onion
1/4 cup sley chopped
-- dressing --
1 cup onnaise good quality, whole egg
1 cup r cream
1 tablespoon te wine vinegar
2 cloves lic crushed
1 tablespoon ey
1 tablespoon on mustard

Bake potatoes until tender and golden, approx 30-40mins in a 200C oven. Let cool on baking until room temperature. While the potatoes are baking you can; Fry the bacon until crispy, in fry pan on med-high heat. Set aside to cool. Chop bell pepper, slice the red onion and chop the parsley. Combine potato, bacon, bell pepper, onion and parsley in a bowl with dressing mix to combine. -- Dressing -- Mix all ingredients together well in a bowl.
