1 large cken (fat)
1 pound Noodle
SAUCE
4 ounce hroom (small can)
1/2 pound Cheese (American) ted
1 small jar ento
1/2 cup ur
1 cup Butter [use cken fat for richer]
4 cups cken Stock

[The original recipe was richer but has been changed for healthier version; options to do "authentic" version are included] Boil chicken until done (with favorite stock additions: e.g. onion, carrot, celery, spices), cool, then pull off bones. [Optional for richer: grind skin and mix with meat]. Concentrate stock to 4 cups. Boil noodles in salt water al dente, then blanch. Make sauce. [Optional: Use two cups milk instead of equivalent stock for richer] Mix all ingredients together in large bowl, place in well-buttered baking pan (glass casserole pan, large; or two smaller pans for two meals - cover with foil and refrigerate for another baking). Put cracker or breadcrumbs on top, then sprinkle with grated cheese (Parmesan, or other hard Italian cheese) Bake in slow oven 350? for 1 hour.
