6 boneless skinless cken breast halves
1 1 cup onnaise
1 1 cup thick and chunky medium salsa (jarred not salsa fresca)
1 T. minced fresh antro
1 T. fresh e juice
1 clove lic minced
3 cups fresh French breadcrumbs made in a d processor
1 cup grated apeno jack cheese
1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper. Trim chicken and pound to an even 1 inch thickness and place on the baking sheet. 2. Stir together the mayonnaise salsa, cilantro, lime juice and garlic. Spread a generous layer over the chicken. Toss the breadcrumbs with the cheese and mound on each chicken breast, pressing lightly to compress. Bake for 12 to 15 minutes or until breadcrumbs are browned and chicken is cooked through.
