Baked Whiting, Sea Trout Or Redfish

Bake Seafood Main Dish Fish American-South

2 pounds Fish whiting, trout or redfish lets- or other white
1 medium on sliced thin and in half
1 large per sliced thin- green, red, yellow, etc.
1 ea atoes sliced thin
1/2 ea on sliced thin
1/2 ea e sliced thin
1/2 ea on juiced
1/2 ea e juiced
1/4 cup ve oil extra virgin- or 2 tbl butter
soning some type of mixed seasoning like Everglades Seasoning, Tony Cac

Preheat oven to 350 degrees. Layer the fillets in the bottom of glass baking dish, no need to grease the dish. When layering, overlap the thin portions of the fillets to make the fish about the same thickness across the dish. Season the fish with the seasoning. Layer on the sliced vegetables, lemon and lime. Pour the lemon and lime juice over the dish. You can sprinkle some olive oil or put some pats of margarine or butter over the dish but it is not essential. Sprinkle more of the seasoning over the dish. Cover with lid or aluminum foil. Place in oven, cooking time will vary by the amount and thickness of the fish. Generally it will be about 15 minutes but cook until the center pieces of fish are just flaky. Don't overcook!
