Fauxtatoes/grits: mashed cauliflower

1 head liflower (or two small heads)
4 tablespoons ter
4 oz. cream cheese (can substitute fchatel cheese)
0.5 cup light am or half-and-half
1 salt and per to taste
1 cheese; lic - optional

Steam or boil cauliflower until very soft (steaming retains more nutrients), about 10 minutes. Once soft, mash cauliflower with a potato masher or ricer, just like with mashed potatoes. Stir in butter, cream cheese, and cream; continue stirring over low heat, adding salt and pepper to taste. Add other mix-ins as you would with mashed potatoes. Leave consistency rough for grits, or whip/blend for a finer mashed consistency.
