Dave's Sourdough Pancakes

1 cup Sourdough ster Northwest
2 cups Water
2 1/2 cups ur
3 tablespoon ar
1/2 teaspoon t
1/4 cup etable oil
1 large well beaten
1 1/2 teaspoon ing soda

To the starter add the water and flour. Mix well cover and let stand at room temperature overnight. In the morning return 1 cup starter to the fridge, To the remaining starter add the sugar, salt, vegetable oil and egg and mix well. Add the baking soda and blend well. Let stand while you fry bacon or sausage. Fry pancakes

Combine flour, salt and baking powder in a large pouring bowl (it has to fit flour and milk). In separate bowl, whisk milk, egg and vanilla extract. Slowly pour milk into flour while stirring until all flour has been mixed. (Small lumps are OK) Add fruit (optional) Pour batter on preheated medium heat skillet and flip when the top of pancake has bubbled all over.

The batter for these "pancakes" contains flour, milk and eggs. It's baked in two 9-inch glass dishes, then sprinkled with powdered sugar.

Blueberry Oatmeal Pancakes

3/4 cups oatmeal
1 cup termilk (or 1 cup milk and 1 tbs vinegar)
1/4 cup ur
1/2 tsp ing soda
1/2 tsp ing powder
1/4 tsp t
2 tbs wn sugar
1 beaten
1 tsp illa
1 eberries (smaller berries are better)

Mix oatmeal and buttermilk and sit for 10 minutes. Combine dry ingredients. Mix egg and vanilla into oatmeal mixture Combine dry and wet ingredients. Batter is very wet. Drop onto buttered griddle. Place blueberries on each pancake. Fry, flip, fry. Enjoy!

1/2 cup namon Applesauce smooth
1/4 teaspoon illa

Combine dry ingredients, then add remaining ingredients and beat together with wisk. Pour the batter onto a hot , lightly oiled griddle or skillet. Cook until pancakes have a bubble surface and slightly dry edges (2-3 minutes). Turn pancakes. Cook for an additional 2-3 minutes until golden brown.

2 yolks well beaten
2 cups k

2 whites stiffly beaten

Sift together dry ingredients. Combine egg yolks and milk. Pour into dry ingredients. Stir well. Stir in oil and apples. Fold in egg whites. Let batter stand for a few minutes. Bake on griddle. Serve with cinnamon syrup.

2 tablespoons on juice (her recipe calls for the juice of 1/2 large lemon)
1 7/8 cups whole k - at room temperature

6 tablespoons unsalted ter - melted
1 1/2 cups -purpose flour
2 tablespoons ar

2 teaspoons ing soda
1/4 teaspoon ing powder
Maple or it Syrup - warmed, for serving

Place lemon juice in a large liquid measuring cup and add enough milk to make two cups. Mix well, then let stand for five minutes. Place eggs in a blender and process on medium speed for a few seconds. Add lemon-milk mixture and melted butter to the beaten eggs and process until well mixed, about 5 seconds. In a medium bowl, wisk together the flour, sugar, salt, baking soda and baking powder. Add dry ingredients to wet ingredients in the blender and pulse a few times in short burst on medium speed, stop and scrape down sides of blender as necessary, then continue to process on medium speed until just blended and no lumps of flour remain, another 10 to 15 seconds (blend everything together for only the shortest time necessary). Heat a heavy skillet or griddle over medium-high heat, or if using an electric griddle, heat to 375 degrees F. Skillet is ready when a few drops of water flicked onto the hot surface forms beads and dances across it. When hot, lightly grease the skillet with bacon grease, vegetable oil, or spray with nonstick cooking spray, and adjust heat to maintain temperature. Pour batter from blender, in about 1/4 to 1/3 cup amounts, onto hot skillet to form 5-inch pancakes, making sure to leave space between them. Cook until batter has set, tops have bubbled, and bottoms are golden brown, about 1 1/2 to 2 minutes. Flip pancakes and cook until golden brown on second side, about 30 seconds to 1 minutes more. Repeat with remaining batter, adding more grease or oil to skillet as necessary. Serve immediately, or to keep warm until all pancakes are cooked; place pancakes side-by-side, uncovered, on a wire rack (sprayed with nonstick cooking spray) set over a baking pan in a 200-degree F oven. Serve topped with butter and drizzled with either a warm maple or fruit syrup. Cooks Notes: - You can substitute 2 cups of buttermilk for the lemon-milk mixture, if desired. - If the tops of the pancakes bubble and the bottoms don't brown, the heat is too low; if the bottoms brown before the tops bubble, the heat is too high.

Put all ingredients in blender and process until smooth. Heat a small fry pan, brush with butter (or spray with Pam). Pour in enough batter to cover the bottom. Tip and roll the pan if necessary in order to spread the batter thin and evenly. Brown on one side. When top is set, flip pancake. Sprinkle with confectioner sugar and roll jelly-roll fashion. Keep in warm oven before serving with strawberries and whipped cream.
