Remove meat and shred, discarding bones, gristle and fat. Reserve one cup of the broth for the sauce. To prepare the sauce: In a large saucepan, cook chopped onion in butter until tender. 8 patties ter
1 cup water

Dredge a 4 pound chuck or shoulder beef roast with a mixture of flour, salt and pepper. Place 3 or 4 patties of butter in bottom of roaster pan. Put meat in pan and put 3 or 4 patties of butter on top of meat. Bake at 350 degrees F for one hour, uncovered. Add 1 cup of water, cover and bake for 2 more hours at 250 degrees F. -- Notes -- This recipe works equally well with other inexpensive cuts of beef like the Eye of Round Roast, Bottom Round or Rump Roast, and the Top or inside Round Roast. For even richer and more savory pan juices, and eventually gravy, try substituting Beef Broth or Beef Consomme for the water. For a complete meal, add your favorite vegetables (onions, potatoes, carrots, celery, mushroom, etc.) and once cooked, simply season and thicken the pan juices, and your meal is finished.

2 tablespoons minced lic (or pressed through garlic press)
4 tablespoons li powder (Spice Islands brand adds great flavor)

2 pounds und beef (preferably coarse ground and 85 percent lean)
2 cans (15 oz each) red kidney ns - drained and rinsed
1 can (28 oz) diced atoes - with juice
1 can (28 oz) ato puree
Table t

Heat oil in a large heavy-bottomed nonreactive saucepot or Dutch oven mediun heat. When oil is shimmering, add the onions, bell pepper, garlic, chili powder, cumin, coriander, pepper flakes, oregano, and cayenne. (Dry seasonings are added at the beginning with the onions so the spices release their oils and the vegetables have enough time to absorb all the flavors.) Cook the mixture, stirring occasionally, until vegetables are softened and lightly colored, about 10 minutes. Increase heat to medium-high, add half the beef and lightly season with about 1/4 teaspoon salt. Cook, breaking up the meat with a wooden spoon, until no longer pink and just beginning to brown, roughly 4 to 5 minutes. Add remaining beef and lightly season again with about 1/4 teaspoon salt. Cook, breaking up the meat with a wooden spoon, until no longer pink, another 4 to 5 minutes. Add beans, tomatoes and their juices, tomato puree, and about 1/2 teaspoon salt. Bring to a boil, then reduce heat to low and simmer, covered, for 1 hour, stirring occasionally. Remove lid and continue to simmer for another hour, stirring occasionally, until meat is tender and chili is slightly thickened (if chili begins to stick to bottom of pot, stir in 1/2 cup water and continue to simmer). Taste and, if necessary, adjust seasoning with salt. Remove from heat and serve, or refrigerate, and serve the next day. To serve, ladle into bowls, and top with your favorite condiments. Makes about 8 to 10 servings. Slow Cooker: Cook vegetables and meat as directed above then add cooked meat mixture to a slow cooker; stir in the beans, diced tomates, tomato puree, about 1/2 teaspoon salt, and cook on the high setting for 4 hours. Cooks Notes: If you're a fan of spicy food, try using a little more of the crushed red pepper flakes and/or cayenne...or maybe add a couple seeded and diced jalapeno peppers. The flavor of chili improves with age. So, if possible, make it one to three days in advance and reheat before serving. Leftovers can be frozen for up to a month.

2 ea Cans of refrigerated cuits
10 slices Baby ss cheese

In a preheated skillet, brown the meat, onion and bell pepper. Drain well. Flour a surface, take two biscuits, overlap them and then roll them out into a figure 8. Spoon about 3 tablespoons of the meat mixture onto on half of the dough and top with sliced cheese. Pull and stretch the empty side over and onto the mixture. We find it helps to slightly moisten the edge of the dough with water first. Then crimp the pie closed with a fork. Bake the pies at 425 for 8-10 minutes each, until golden brown all over. If you're using the a ceramic cooker like the Big Green Egg, set it up with the plate setter LEGS DOWN with a pizza stone on top. If you're using an oven, a pizza stone would help but you can use a baking sheet if that's what you have. If you don't preheat the stone, the bottom of the pies will be a bit doughy, so take your time and preheat!

beef elegant dinner Puff pastry Family Favorites Mushrooms Beef British

1 1/2 lb beef derloin trimmed
12 oz baby bella hrooms*
2 tsp on powder
1 sheet of f pastry rolled out thin
1 -2 TBS tard
7 slices of sciutto
1 egg for sealing the f pastry/glazing the top
1 salt/pepper I used her salt and coarse grind pepper
3 -4 TBS oil to r the beef

Trim fillet, if needed of all the fat and sinews.Season with salt and pepper.Heat some oil in a large pan and quickly. You don't want to cook the beef, just sear so you seal in the juices. Remove and allow to cool.fry the seasoned beef all over until it's brown.Brush generously with the mustard. Roughly chop the mushrooms and blend in a food processor to form a puree.Heat a skillet until hot. Add the puree of mushrooms and season with salt and pepper. I also added some onion powder. Cook without any oil/butter until it is dry and all the water has evaporated. The mixture should be sticking together in the form of a paste. Set aside and cool. Roll out a generous length of cling film, lay out the four slices of Prosciutto ham, each one slightly overlapping the last. Spread the mushroom mixture evenly over the ham. Place the beef fillet in the middle.Roll the prosciutto and mushrooms over the beef into a tight log shape. Twist the ends to secure the clingfilm.Refrigerate for 10 -15 minutes, this allows the Wellington to set and helps keep the shape. Roll out the pastry quite thinly to a size which will cover your beef. Unwrap the meat from the cling film. Egg wash the edge of the pastry and place the beef in the middle.Roll up the pastry, cut any excess pastry off the ends and fold neatly to the 'underside'. Turnover and egg wash over the top.Chill again to let the pastry cool, approximately 5 minutes. I let mine chill for about 20 minutes while I cleaned up. You will also want to preheat your oven to 425 F. Egg wash again before baking. I placed my beef loaf unto a parchment lined baking sheet. This helps with the clean-up. Bake at 425 F for 10 minutes on middle rack. I then moved the sheet pan to the lower middle rack, for an additional 20-30 minutes. The total baking time should be about 35 - 40 minutes, depending on the size. Mine took about 40 minutes for the larger piece and 3o minutes for the smaller piece.Rest 8 -10 minutes before slicing. Serve with potatoes and salad. ~ If , you like your beef more well done, you can cook it longer. Just make sure you cover the puff pastry lightly with a foil so that it won't burn on you. Use an instant thermometer, if need be. TIP: 1.When sauteing mushrooms, make sure they are completely dry. It should clump up on you and sort of form a paste. If you don't extract all the water from the mushrooms, you will have a soggy puff pastry. 2. I baked mine at 425 , 10 minutes on the middle rack and an additional 30 minutes on the lower rack so that the puff pastry would not burn on top.
