Strawberry Cucumber Salad

1/3 cup slivered onds toasted
2 tbsp seedless awberry jam
1 tbsp green ve oil
2 tsp samic vinegar
1 tsp on mustard
3 cups diced English umber
1 cup slices fresh awberries
2 tbsp chopped fresh t
1 salt and freshly ground ck pepper

Toast the almonds either in a skillet or toaster oven, stirring frequently to avoid burning. Next, whisk together the jam, olive oil, balsamic vinegar and Dijon mustard (honey Dijon also works). Add the cucumber, strawberries, mint and toasted almonds, and toss to combine. Season to taste with salt and black pepper. Serve on a bed of Romaine or red leaf lettuce. Other variations include adding roasted pine nuts, walnuts or pecans. Try adding 1/4 cup cold, dry sparkling wine. Chicken or crab are also good additions.

Dressing:
1/2 cup etable Oil
1/3 cup ar
1/4 cup Wine Vinegar

8 cups of aine (Torn)
4 cups y Spinach
2 1/2 cups Fresh awberries Sliced
1 cup Shredded Monterey Jack Cheese
1/2 cup Chopped nuts

Combine the dressing ingredients together and shake well and refrigerate. (Can be done the day before serving). Toss the remaining ingredients in a large Salad Bowl. Drizzle with the dressing and toss again. Serve immediately.

1/2 pkg frozen f pastry sheet (1 sheet) thawed
1/4 c. finely chopped onds

12 large awberries sliced

Preheat oven to 400 degrees F unfold pastry sheet onto baking sheet or stone. Combine almonds and sugar. Lightly press mixture into the thawed dough. Cut pastry lengthwise into 3 strips, then crosswise into 4 strips (for 12 total) Separate squares. Bake 16-18 minutes until golden brown. Let cool completely. Split open cooled squares. Arrange half strawberries in bottom of shell. Top with whipped topping, remaining berries and tops of shells.

1. Place milk in the top of a double boiler and bring just to a simmer over gently boiling water over medium heat. 2. Meanwhile, whisk together eggs, egg yolks, and 3/4 cup sugar in a mixing bowl. Lightly whisk 1/4 cup of the hot milk into egg mixture, then whisk egg mixture into remaining milk in top of double boiler. Cook, stirring constantly with a wooden spoon, until mixture is thick enough to coat back of a spoon, about 15 minutes. 3. Transfer mixture to a mixing bowl; stir in heavy cream; refrigerate until cold. 4. Combine strawberries, 1/3 cup sugar, and lemon juice in a mixing bowl. Cover and refrigerate for 2 hours. 5. Slightly mash strawberries, then stir into cream base and pour into an ice cream maker. Process according to manufacturer's directions.

Preheat oven to 350 deg. Combine flour, sugar, baking soda, salt, and cinnamon. Blend eggs, oil, vanilla, and strawberries together in a separate bowl. Add strawberry mixture to dry ingredients, and mix well. Stir in pecans. Pour into two greased 9" X 5" X 3" loaf pans or eight greased 5-3/4" X 3-1/2" X 2" mini loaf pans. Bake for 45-60 minutes, or 40-45 minutes if using mini loaf pans, until a toothpick inserted in the center comes out clean. Cool in pans on wire rack for 10 minutes; then remove to wire rack to complete cooling. Yields 2 standard loaves or 8 mini loaves.

Strawberry No-bake Cheesecake

1 pound Frozen awberries unsweetened
1/2 cup enda bulk
1/2 cup charin
1 pound am cheese
1 envelope Unflavored atin

Place strawberries in medium bowl. Thaw completely. Sprinkle sweeteners over berries; blend well with electric mixer. Don't worry about having chunks of berries; my version isn't pureed. Cover tightly and let stand in refrigerator for 2 days to allow flavors to blend. On day 3, soften cream cheese at room temperature. Remove berries from refrigerator and put in strainer or colander over small bowl. Let stand until most of juice has drained from berries. Set berries aside. Sprinkle gelatin over juice and let stand for 5 to 10 minutes, until gelatin is softened. Place juice and gelatin in microwave and heat for 1 to 2 minutes, until hot and gelatin is completely dissolved. Stir well. Beat cream cheese until smooth; add gelatin mixture to cheese, a little at a time, scraping sides of bowl and beating well after each addition. When gelatin is fully incorporated into cheese, add vanilla, scraping sides of bowl and blending well. Beat in strawberries and pour into an 8" square glass pan. Cover tightly and chill overnight before serving. Per Serving: 222 Calories; 18g Fat (70.0% calories from fat); 5g Protein; 12g Carbohydrate; 1g Dietary Fiber; 55mg Cholesterol; 173mg Sodium.

4 sheets llo dough thawed
1 tablespoon ar
1 Butter flavored (or regular) king spray
2 cups sliced fresh awberries
1/4 cup ar
3 tablespoons nstarch

Preheat oven to 375 degrees. Line a baking sheet with foil and spray lightly with cooking spray. Combine strawberries, sugar and cornstarch in a bowl and toss to coat. Set aside. Lay one sheet of phyllo on baking sheet. Spray liberally with cooking spray. Sprinkle very lightly with sugar. Lay second sheet of phyllo on top of first and spray with cooking spray. Pile half of strawberry mixture on one end of phyllo dough, several inches from the short end. Fold over and roll (like a burrito), folding in ends as you go, until completely rolled up, seam side down. Spray outside of strudel and sprinkle lightly with sugar. Repeat with remaining phyllo and strawberries. Bake for 20-25 minutes or until golden brown. Cut in half and serve warm.

Preheat oven to 350 degrees. Freeze cookie dough until very firm. Slice thinly and spread in a pie pan. Bake 12-15 minutes until brown; cool. In a saucepan, mix sugar and corn starch. Add mashed strawberries and cook slowly for 10 minutes or until it thickens. Cool slightly. Add whole strawberries and pour into crust. Chill. Top with Cool Whip.

Set Cool Whip out to soften while you mix milk and instant pudding together till thickened, about 5 mins, in lg bowl..gently stir in cool whip..refridgerate. Wash, hull, and slice strawberries and put in medium bowl..add strawberry glaze and mix till all strawberries are well coated. Cut pound cake into bite size pieces, put in small bowl. In lg serving bowl, layer pound cake, then strawberry mixture, then pudding mixture..repeat ending with pudding mixture on top..refridgerate for about 1 hr..Serve

1 cup awberries frozen and unsweetened
1 cup ice (up to 1-1/4 cups)

Place all ingredients into Vita-Mix container in order listed. Secure lid. Select Variable #1, turn to ON, and quickly increase speed to #10. Switch to HIGH. Run about 20 sec until smooth. Use tamper, if necessary, to help circulate ingredients.

Combine flour, salt, sugar, baking soda and cinnamon. Beat eggs. Add eggs, shortening , strawberries and bread dough enhancer. Stir until all ingredients are moistened. Spoon batter into 2 well-greased 9x5x3-inch loaf pans. Bake at 350 degrees for 60 to 70 minutes. Test and keep baking until toothpick comes out clean. Cool in pans 10 minutes. Put upside down and let cool on racks. Serve while still warm. You can store the strawberry bread in the fridge for a few days.

1 can 14 oz Eagle Brand Sweetened densed milk
1/4 cup on Juice
1 tub 8 oz. l whip divided
8 oreo (choc) Cookies finely chopped

Line 8 x 4 inch loaf pan with foil. Mash 2 cups of strawberries in large bowl. Stir in condensed milk, juice and 2 cups of the Cool Whip. Pour into pan. Top with combined chopped cookies and butter; press into mixture. Cover Freeze at least 6 hours . To serve, invert onto plate. Remove foil. Frost with remaining Cool Whip. Top with remaining strawberries, sliced. Makes 12 servings

1. Preheat the oven to 350 degrees. Grease a 2 qt. baking or gratin dish with butter. 2. Toss strawberry halves with cornstarch until evenly coated, then arrange berries, cut side down, in the the bottom of the dish. 3. In a blender whirl eggs, milk, flour, sugar, vanilla and salt for 15 seconds. Pour batter over strawberries. 4. Bake until puffed, golden brown, and set in the center - about 50 minutes. Dust with powdered sugar and serve warm. 5. Good with cream or ice cream on top.
