Slit the chestnuts and bake or boil them for 20 mins Remove the shells and skins Stew the chestnuts until tender in sufficient stock to barely cover them Rub them through a fine wire sieve (or mum uses potato masher!) Add the butter, seasoning, flavouring and sugar and sufficient stock to make a soft dough. And tadaaaaa all ready
