Salt and let stand the aubergines for 2 hours. Rinse well and fry in some olive oil. Boil the potatoes for a couple of minutes and then fry in some olive oil till tender. Fry onions in the olive oil and add the garlic and courgettes. Add the soya mince which should have previously been rehydrated with some olive oil and some vegetable stock. Add the tomatoes and finally add the pine kernels and the cheese. You may like to add some herbs here, though this wasnt done traditionally. In a glass baking dish make layers of aubergines, tomato/mince sauce and the potatoes mixed with the white sauce. Make sure the top layer is a potato/white sauce mix. 1 tablespoon fresh flat sley leaves - chopped

Finely mince 3 garlic cloves, or put them through a garlic press. In a medium bowl, combine minced garlic with about 2 tablespoons olive oil and salt. Stir in shrimp and let marinate at room temperature for 30 to 45 minutes. Meanwhile, smash 3 garlic cloves. Heat smashed garlic with remaining olive oil in a large skillet over medium-low heat. Cook, stirring occasionally, until garlic is a light golden brown, about 4 to 6 minutes. Remove skillet from heat and allow oil to cool to room temperature. Remove smashed garlic from skillet and discard. Thinly slice remaining 6 cloves garlic. Return skillet to low heat and add sliced garlic, bay leaf, and chile. Cook, stirring occasionally, until garlic is tender but not browned, about 4 to 6 minutes. (If garlic has not begun to sizzle after 3 minutes, increase heat to medium.) Increase heat to medium-high; add shrimp with marinade to skillet in single layer. Cook shrimp, undisturbed, until oil starts to gently bubble, about 2 to 3 minutes. Turn shrimp over and continue to cook until shrimp are cooked through, about 2 to 3 minutes longer. Sprinkle with parsley and serve immediately. Serve with lots of warm crusty bread and accompanied by flutes of a good sparkling wine, such as a Cava, or even a fine Champagne. Makes 4 to 6 for appetizer servings. If preparing as a main course, double the recipe. * Note: The slightly sweet and nutty Cascabel chile is the traditional chile used in gambas al ajillo but the New Mexico chile (a.k.a. California chile, chile Colorado, or dried Anaheim chile) is a good substitute. Crush and roughly break the chili pepper into 2 or 3 pieces (for more spice and heat, chop it finely).

Combine milk and butter in glass measuring cup,microwave on HI 30 to 45 seconds until butter melts (and is 120?-130?, this activates yeast, so the milk needs to be hot, but not boiling) Pour into bowl, add yeast, 1 cup flour, sugar, egg, and salt. Beat on low speed 3 minutes, scraping bowl occasionally. Add 2-1/2 cups flour, beat on low until flour is absorbed and dough is sticky, and if dough is too sticky, add flour be the tbsp until forms a soft ball. Lightly flour work surface and knead until smooth and elastic, adding flour as needed for about 8 minutes. Form into ball, spray large bowl with pam and add dough to bowl, turning to coat. Cover bowl with saran wrap (important) then with a towel. Let dough rise until doubled in size. After dough is risen, punch down on surface and roll out into large square about 1/2" thick. In bowl, melt butter for filling (3/4 cup) and add brown sugar and cinnamon. Mix well and spread equally over the rectangle dough you have rolled out. Roll into a log. Cut into 18 pieces ( if you get less thats ok you will just have bigger cinnamon rolls. Let rise in pan for 45 minutes. Bake at 375? for 20 minutes, watching closely after 15 minutres, while cooking, make glaze and take rolls out of oven when done. Let them cool just a little, you want to spread the glaze on while they are warm but not hot. (OR, refriderage the glaze and just put the glaze on and microwave warm when ready to eat it. thats what I do) I would recomment removing rolls from pan while they are still warm, if they cool in the pan they were cooked in it will be hard to get them out because the sugars drain to the bottom and then harden.

2 tablespoon molasses (or, wn sugar)

1 large or extra-large , lightly beaten
1 tablespoon cestershire sauce
1/2 cup porated milk, divided (or, half-and-half or sweet milk)
1/3 cup fresh sley, minced

For the glaze, combine the ketchup, vinegar, cumin, Worcestershire sauce, hot pepper sauce and honey, set aside. Place oven rack to middle position; heat oven to 350 degrees F. Heat butter in 10-inch skillet over medium-high heat until foaming; add onion and bell pepper and cook, stirring occasionally, until softened, 4 to 5 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute. Transfer mixture to small bowl, set aside to cool. In a small bowl, whisk egg with molasses, salt, pepper, celery salt, mustard, Worcestershire sauce, 1/4 cup of the evaporated milk and 1/2 the glaze mixture, until combined. Gently break-up ground beef in a large bowl. Add bread crumbs, parsley and cooked onion, bell pepper and garlic. Pour egg mixture over meat mixture and mix gently with hands until thoroughly combined, about 1 minute. If mixture sticks to bowl, add additional evaporated milk, 1 tablespoon at a time, until mixture doesn't stick. Be careful not to overmix, and avoid squeezing the meat. Transfer meat mixture onto the center of a shallow parchment paper-lined baking sheet or pan and form into a 9- by 5-inch loaf shape, avoiding air pockets. Smooth top and edges of meat loaf with moistened spatula. Bake at 350 degrees F until meatloaf is to medium doneness, an instant-read thermometer inserted into center of loaf reads 155-160 degrees F, about 55 to 65 minutes. Brush the remaining glaze onto the meatloaf after it has been cooking for about 10 minutes. Remove from oven, let stand 15 minutes. Transfer to a platter, and cut into thick slices. Makes 6 to 8 servings. * Note: My father makes his fresh bread crumbs with a knife...you can make them by tearing bread slices into quarters and pulse a few times in a food processor until the crumbs reach your desired texture (three slices will make about 1 cup of soft fresh crumbs).

In a large stockpot, heat vegetable oil over medium-low heat. Add sliced garlic, finely diced shallots and onion. Simmer for 5-10 minutes, or until onion starts to caramelize. Add cans of crushed tomatoes; add sugar. Bring to a boil and then simmer for 5-10 minutes. Stir in chicken broth. Remove from heat and let cool a bit. Working in batches, puree the soup mixture in a blender or liquid-tight food processor. (NOTE: Heated liquid expands tremendously when you try to puree it -- only fill it halfway full at most, each time!) Put pureed mixture in a bowl, then rinse the stockpot out and put pureed soup base back in. OPTIONAL: If you'd like a smooth texture to the soup, you should cool it and strain it at this point, working in batches, with a sieve. (I prefer the more rustic texture of pureed but unstrained soup.) It can remain in this state (refrigerated) for a few days, until ready to serve. To serve, bring tomato soup mixture to medium heat, and then stir in cream. (In this way, you are keeping the cream out of the pureeing step -- which might whip it -- and also the heating-to-boiling step -- which might curdle it.) Top with basil, rolled gently and sliced very thinly (i.e., chiffonade). Serve with crusty bread, salad, or cheese toasts; pair with a crisp Pinot Grigio or Savignon Blanc, or even a deep red like a Cabernet.

1. Bring small saucepan of water to a boil. Add tomatoes; cover and remove from heat. Let tomatoes stand 20 minutes to soften, then drain and quarter; set aside. 2. In large plastic or paper bag, coat beef with four in 2 batches, shaking offexcess. Place in single layer on wax paper. 3. Warm 3 tablespoons of the oil in 8-quart Dutch oven over medium-high heat. Add beef in batches so pan is not crowded. Cook until browned on all sides. (Add a bit of additional oil if needed.) Remove to large plate. 4. Warm remaining 1 tablespoon of oil in same pan over medium high heat. Add onion; cook 10 minutes, or until lightly browned, stirring occasionally. Reduce heat; add carrots and cook 3 minutes. Cut chicken thighs into 1/2 inch pieces.In a separate bowl, mix the marinade and pour over the chicken.Mix completely so that all the chicken pieces are covered. Let marinade for 1-2 hours. Drain and skewer a few chicken pieces on each bamboo skewer. Heat a non stick pan on med high until hot. Lower the heat to med/low and add a few skewers to the pan. Cook on one side for 3-5 minutes or until caramel brown.Turn over and cook second side until caramel brown. You will notice that as the chicken cooks, it first releases some liquid and then the liquid starts to caramelize. It will then coat the chicken. Make sure your heat is not too high when cooking the chicken. Baste with extra honey if you like and cook for an additional minute or so. Sprinkle sesame seeds and serve.You can keep them warm in a 200 deg oven.

Heat oven to 425 degrees. Line 9-inch pie pan with one of the unbaked crusts. TO MAKE NUT FILLING: Combine nuts, brown sugar, milk, egg,vanilla,lemon juice and butter. Spread evenly over bottom of unbaked pie shell. TO MAKE APPLE FILLING: Place apples in a large bowl. Sprinkle with lemon juice. Combine granulated sugar,flour,cinnamon,and nutmeg. Sprinkle over apple slices. Toss to coat. Spoon over nut filling. Dot with butter. Moisten pastry edge with water. Place top crust onto filled pie. Fold top edge under bottom crust. Flute. Cut slits in top crust for escape of steam. Decorate if desired and glaze with remaining egg.Bake for 50 min - 1hr 15 minutes or until bubbly and the filling is thickened. I put a wide range in the bake time because you might have to bake it longer than 50 minutes(if your apples are juicier)...just make sure the filling is not watery but rather thickened and bubbly. Cover edge of pie with foil, if necessary, to prevent over-browning. Sometimes, I usually just cover the whole pie half way through the baking process. This way I know for sure that the crust will not burn. Cool until barely warm or to room temperature before serving.

Heat oven to 300 degrees F. Liberally season roast with salt and pepper. Heat olive oil over medium-high heat in a 6-quart Dutch oven or other heavy bottomed oven-proof pan. Sear roast until well-browned on all sides. Remove roast from pan and reduce heat to medium. Add onion and cook for 10 minutes, stirring frequently. Add paprika, bay leaf, rosemary, oregano, thyme, and garlic, cook 1 minute. Add wine and 1 1/2 cups of the broth, bring to a boil. Add potatoes and carrots, return roast to pan, season with salt and pepper. If the liquid doesn't cover the roast and vegetables, add more stock until it just does. Continue to heat until it simmers. Place a large piece of foil over the pan and cover tightly with a lid; transfer the pan to the oven and cook for 2 1/2 hours. Uncover, turn the roast over, cover and cook for another 1 1/2 hours or until beef is fully tender and a meat fork or sharp knife easily slips in and out of the meat (fork-tender). Transfer roast to a carving board; tent with foil to keep warm. Transfer vegetables to a deep serving platter; loosely cover to keep warm. Allow liquid in the pot to settle about 5 minutes, then use a wide spoon to skim the fat off the surface; discard bay leaves. Boil over high heat until reduced to desired consistency. Check and adjust seasoning. Slice the roast (or pull apart with fork) and arrange on the deep serving platter with the vegetables. drizzle with some of the sauce, and serve the extra sauce on the side. Makes 6 to 8 servings.

In a large skillet or cooking pot, saute bell pepper and onion in oleo or olive oil if you prefer. Add 1 can of chicken broth and chicken. Simmer until tender. Cut chicken into bite-size pieces as it's cooking. Use 3 cups of chicken. I've used packaged chicken tenderloins, as well as pre-cooked chicken from the deli. Whatever is convenient. It's all good. Add all soups and Ro-tel tomatoes. Stir well. Simmer for about 15 minutes until chicken is done. Cook the spaghetti in boiling water or chicken broth until just slightly cooked "al dente" - you don't want to over-cook it because it will be cooking more in the oven. Drain, rinse, and set aside until you are ready to mix with chicken/sauce ingredients in baking dish for the oven. In a large baking dish or oven-proof pot, place the cooked and cut up chicken, cooked spaghetti, salt and pepper, cheese, and soup mixture. Depending on how creamy you like this dish, you may want to add extra chicken broth before you bake. (I always do). Stir very well to mix all ingredients evenly. I usually stir once after about 15 minutes in the oven - after the cheese has had time to melt. Bake at 375 degrees for 30 minutes. You can add canned or fresh mushrooms if you like. Also, for a nice touch - (looks pretty for guests) you can add one can of black olives, sprinkled over the top of the casserole. (optional). (I slice them to make them go further). Please note that if you want to cut the fat from your diet, this tastes equally good with fat-free soups and the "lite" velveeta. You can also leave out the olive oil or oleo and spray the pan with pam and add extra fat-free chicken broth. A good company dish. Everyone always seems to enjoy this dish and I usually get asked for the recipe. Yield: yield: 8 to 10

If you don't have a food processor, soften the cream cheese for a few seconds in the microwave, then mix it with everything in a small bowl. Spread the cream cheese mixture on two pieces of toasted try. Top each with a thick layer of smoked salmon, lettuce and red onion. Place one pile on top of the other then top the works with yet another slice of rye. Repeat with the remaining ingredients for the second sandwich. Cut in half - corner to corner-and pass them around.

Trim stems and remove any wilted outer leaves from Brussels sprouts; wash. Halve vertically any large brussel sprouts; set aside. In a very large mixing or deep container stir together the 8 cups cold water and kosher salt until salt is completely dissolved. Add Brussels sprouts to brine mixture; making sure the sprouts are completely submerged (weigh down with a plate if necessary to keep sprouts submerged). Let stand for 1 hour. Preheat oven to 400 degree F. Drain Brussels sprouts; do not rinse. Place drained sprouts in a bowl with the olive oil, salt and pepper, toss until coated. Transfer to a shallow baking dish or sheet pan large enough to hold the sprouts in a single layer. Roast, turning every 10-15 minutes, for 35-40 minutes, or until lightly browned and crisp outside and tender inside...you'll note that leaves that are loose will be especially brown and crispy...this is ideal. If desired, sprinkle with a little more salt and/or shaved romano cheese before serving. Variations: I prefer my Brussels sprouts very tender and browned...feel free to pull back on the roasting time if you like yours a bit more firm. I often add chopped shallot (3 small), which becomes soft and sweet during the roasting process. For even more yumminess, add bacon or pancetta (1/4 pound; cut into small pieces), which coats the sprouts with its tasty fat. You can also sprinkle sprouts with your best quality balsamic vinegar (about 1 tablespoon) during the last 10-15 minutes of roasting, then sprinkle with (about 1 teaspoon) more before serving. The truth is, though, all Brussels sprouts really need to shine (aside from a hot oven) are a little olive oil, salt and pepper.

Preheat the broiler, placing the oven rack on the top rung or 3 inches below the heat source. Season the fish fillets with salt and pepper, rub them with 2 teaspoons of the olive oil, and place them, flat side down, on a broiling pan. Set them aside while you make the vinaigrette. Place the mustards in a small mixing bowl and whisk in the vinegar. Gradually add the remaining tablespoon of olive oil and the vegetable oil, whisking the entire time to make a creamy, smooth emulsion. Stir in the chopped pineapple and season the vinaigrette with salt and pepper. Set the vinaigrette aside or refrigerate it (as long as several days), bringing it to room temperature before serving. Place the fillets under the broiler and broil without turning until theyre just cooked through, 10-12 minutes. To check, place the end of a metal spatula in the thickest part of one fillet where the flesh is beginning to separate into flakes, and push it open slightly. If its done, that piece will move away from the rest of the fillet. Remove the fillets from the oven. Place the grouper on dinner plates, spoon some of the vinaigrette on the side of each fillet, and serve right away. Notes: COMMENTS: Revsin says grouper fillets with just a light coating of olive oil will turn golden brown under the broiler, unlike many other fillets that "need help in the broiler browning department." This dish takes about 30 minutes total prep and cooking time. Whole-grain mustard has a milder flavor than Dijon. Using both types tames the assertive pineapple flavor and gives the vinaigrette a delicately sweet-sour taste, she says. She prefers French mustards. Recipe By: The California Pizza Kitchen Cookbook To prepare dough: Dissolve yeast in water and set aside for 5 to 10 min.. Be sure that water is not too hot: Temps over 120 will kill the yeast. UPRIGHT ELECTRIC MIXER: Use mixing paddle attachment because batch size is too small for the dough hook. Combine all other ingredients. Add dissolved yeast. Use the lowest 2 speeds to mix dough. Mix 2-3 min. until dough is smoth and elastic. Overmixing will produce tough, rubbery dough, and friction will cause dough to rise too fast. IF USING FOOD PROCESSOR: Use dough blade.proceed as in preceeding instructions. IF MIXING BY HAND: Place dry ingredients in a 4-6 qt mixing bowl , make a well in the middle and add liquids. Use a wooden spoon to combine. Lightly oil hands and knead for 5 minutes. When done the dough should be slightly tacky. LIGHTLEY OIL THE ball and the interior of a 1 qt. glass bowl. Place dough ball in bowl and seal bowl air-tight with clear food wrap. Set aside at room temperature to rise until double in bulk: 1-1/2 - 2 hrs. The dough could be used now BUT it would be NOTHING SPECIAL! To obtain that wonderful, chewy, flavorful dough that it will later become, punch down dough, reform a nice round ball and return it to same bowl; cover again with clear plastic wrap. Place bowl in refrigerator overnight, covered airtight. About 2 hours before you are ready to assemble pizza, remove dough from fridge, use a sharp knife to divde dough into 2 equal portions. Roll smaller dough into round balls on a smoothe surface; seal any holes by pinching . Place the dough balls in a glass casserole dish, space far enough to allow each to rise until doubled in size (about 2 hrs.). They should be smooth and puffy. To stretch and form dough for pizza, sprinkle flour on smooth surface. Use a spatula to carefully remove dough ball from casserol dish . Be very careful to preserve its round shape. Flour the dough liberally. Use your hand or rolling pin to press dough down forming a flat circle about 1/2" thick. Pinch dough between your fingers around edge forming a 1/4" rim. Continue this outward stretching until you have reaached a 9" diameter pizza dough. Yields ennough dough for 2- 9" pizzas. After topping pizza transfer to pizza stone in preheated oven. Potato rosti cut the fingerling like medallions or coins no more that 1/3 of an inch thick, in baking sheet pan place all ingredient and bake until potato are completely soft and roasted.Discard all other ingredients. in a bowl pour clarried butter and season with salt and pepper to taste. get a flat pan and and a round cutter carefully place each individual slice in to a cutter and cook potato until golden brown consistency is reach take a metal spatula to carefully remove the potato place in a paper towel to remove all the excess oil. to serve: place the potato rosti in the middle plate add the hamachi on top and scallops around the plate presentation side up. add in the sauce on top and around the plate. garnish with mirco greens drizzle with balsamic vinaigrette.

1. Place the freh, raw tuna filets in a ziploc bag. Pour soy sauce into bag, allowing to coat the tuna. Let sit in refrigerator for about 30 minutes. 2. Preheat your grill or pan (if you're cooking them on the stove) to high heat. Coat the surface of the grill or pan with several sprays of nonstick cooking spray. Cook the filets 3-4 minutes on each side or until they reach desired doneness (typically, spicy tuna filets are seared and remain pink or rare in the middle, but you can cook them longer if you wish). 3. Heat the oven to 400°F. Grease the sides and bottom of a 8 or 9? baking pan with cooking spray. Combine the ricotta cheese, buttermilk, sugar, melted butter, and vanilla in food processor and process until smooth, about 10 seconds. Add the flour, baking powder, salt, and baking soda and pulse in short bursts just until the dough clumps together (don’t overprocess). The dough will be soft and moist. Dump the dough out onto a lightly floured surface and knead it with floured hands 4 or 5 times until smooth (it really only takes 4-5 times). With a rolling pin, roll the dough into a 12×15-inch rectangle. I discovered that 12×15 is exactly the size of my flexible plastic cutting board, so that’s a quick and easy way to size it. Brush the dough with the melted butter, leaving a 1/2-inch border unbuttered around the edges. In a medium bowl, combine brown sugar and spices. Sprinkle the mixture over the buttered area of the dough and press gently into the surface. Starting at a long edge, roll up the dough jelly-roll style. Pinch the seam to seal, and leave the ends open. With a sharp knife, cut the roll into equal pieces (I got 8). Set the pieces, cut side up, in the prepared pan; they should fill the pan and touch slightly, but don’t worry if there are small gaps. My pan was too big, so the rolls didn’t fill it up - no big deal, the outer ones leaned over a little, but it was all good. Bake until golden brown and firm to the touch, 20 to 28 minutes. Set the pan on a wire rack to cool for 5 minutes. Run a spatula around the inside edge of the pan to loosen the rolls, and transfer them to a serving plate. In a small bowl, mix the softened mascarpone cheese, powdered sugar, and vanilla to make a smooth glaze. Add milk as needed to achieve desired consistency. Spread or drizzle onto warm rolls. Let stand 10 minutes (or as long as you can stand) and serve.

Mix well and press into an 8x8 baking dish, greased lightly with cooking spray or olive oil. 7. Sprinkle with remaining cheddar cheese on top. 8. Preheat the oven to 350 degrees F. Brush a 14-inch oval baking dish with 2 tablespoons of butter. In a large bowl whisk together the eggs, 1 cup brown sugar, cream, and milk. Add the vanilla, cinnamon, cherries, bread, and chocolate, and stir to blend thoroughly. Set a 10-inch saute pan over medium-high heat and add the 2 tablespoons of the room temperature butter to the pan; once melted, add the diced bananas to the pan and saute for 3 minutes. Add the remaining 1/4 cup brown sugar to the pan and saute until the sugar is melted, about 2 minutes. Remove the pan from the heat and add the rum and banana liqueur to the pan. Return the pan to the heat and ignite the alcohol. Once the flames die out, fold the bananas into the bread pudding base. Stir the remaining 2 tablespoons butter into the mixture and pour into the baking dish. Bake until firm, about 1 hour. Remove from the oven and allow to cool on rack until just warm. Place a square of the pudding down on the plate, with a scoop of the Drunken Monkey Ice Cream. Drizzle the Chocolate Sauce over the ice cream and bread pudding and garnish with the mint leaves and powdered sugar. Chocolate Sauce: 1 cup heavy cream 8 ounces semisweet chocolate, chopped 2 teaspoons vanilla extract In a small, heavy saucepan, bring the cream to a bare simmer over low heat. Place the chocolate pieces in a medium bowl. Pour the cream over the chocolate and let sit for 2 minutes. Whisk in the vanilla and continue whisking until the sauce is smooth and thickened. Let the sauce cool to room temperature before serving. Yield: 1 1/2 cups Drunken Monkey Ice Cream: 2 cups milk 1 cup heavy cream 1/2 vanilla bean, cut and seeds scraped 1 cup mashed ripe banana 1/3 cup sugar 4 egg yolks 1/4 pound white chocolate, chopped 1/4 cup rum 1/2 cup crushed cashew brittle, recipe follows 3 1/2 ounces semi-sweet chocolate, about 1/2 cup 4 teaspoons vegetable oil In a 2-quart saucepan set over medium heat, add the milk, cream, vanilla bean, pod seeds and the banana. In a medium-sized bowl, combine the sugar and egg yolks and beat, using a whisk, until pale yellow and smooth. Pour about 1 cup of the milk and cream mixture into the egg yolk mixture and whisk thoroughly. Add the egg yolk mixture to the saucepan and simmer gently, stirring with a wooden spoon. Be sure to stir inside the corners of the pan. As the custard cooks, it will thicken, and be able to coat the back of a spoon. This will take about 5 minutes. Remove the custard from the heat and strain through a fine mesh sieve, into a clean non-reactive bowl. Add the white chocolate to the custard and stir to melt the chocolate. Once the chocolate is melted, pour the rum into the bowl and stir well to blend. Refrigerate the custard and allow it to chill for at least 2 hours before proceeding. Once the custard is cool, pour the ice cream base into an ice cream maker, and follow the manufacturer's instructions on how to properly freeze the custard. When the ice cream is partially frozen, add the cashew brittle to the base and continue to churn the machine. While the ice cream is churning, melt the chocolate with the vegetable oil over a double boiler. Stir the chocolate as it melts to keep it smooth. Once the chocolate is completely melted, drizzle it into the ice cream. As the hot chocolate hits the cold cream, it will cool and form into shards. Continue to churn the ice cream until it is nearly completely frozen. Remove from the machine and place in an airtight container. Freeze for at least 4 hours, and preferably overnight. Yield: 1 quart Cashew Brittle: 1 1/4 cups granulated white sugar 1/2 cup water 1/4 cup corn syrup 1-ounce butter (2 tablespoons) 1/4 pound cashews, about 1 cup 1/4 teaspoon baking powder In a saucepan combine the sugar, water and corn syrup. Set over a medium heat, and cook until the sugar turns a caramel color, and a candy thermometer inserted into the sugar registers 280 degrees F. 1. Preheat the oven and prepare the pans Position a rack in the lower middle of the oven and preheat to 350 F. Butter two 9 " round cake layer pans. Line the pans with parchment paper. Butter the paper, sprinkle it lightly with flour, and then tap out the excess flour. 2. Mix the cake batter Sift the flour, baking soda, cinnamon, and salt through a fine-mesh sieve placed over a medium bowl. Set aside. In the bowl of a stand mixer or a large mixing bowl, combine the eggs and granulated sugar. Fit a stand mixer with a paddle attachment. Beat the mixture on medium-high speed until it thickens and the color lightens slightly, about 2 minutes. Reduce the speed to low and beat in the (1 tsp) vanilla extract. Slowly pour in the oil, mixing just until blended, about 1 minute. Add the flour mixture and mix just until no white streaks are visible. Add the carrots, pineapple, and finely chopped walnuts and mix until evenly distributed, 1-2 minutes. 3. Bake and cool the layers Pour the batter into the prepared pans, dividing it evenly and lightly smoothing the tops. Bake until the tops look evenly borwned, feel firm to the touch, and a toothpick inserted in the center comes out dry, 30-35 minutes. Using pot holders, transfer the cakes to wire racks and let cool for 20 minutes. Working with 1 pan at a time, run a thin knife along the inside of the pan. Invert a wire rack on the pan and invert together. Lift off the pan and peel off the parchment. Invert another wire rack on the cake and invert the racks together, so the cake is top side up. Lift off the top rack. Let the cake cool completely on the rack, about 45 minutes. Repeat with the second cake layer. 4. Frost and serve the cake Use the paddle attachment on a stand mixer to mix the cream cheese, butter, and vanilla extract on medium speed until smooth and creamy, about 1 minute. Reduce the speed to low and mix in the confectioners' sugar until smooth. Transfer 1 cake layer to a plate. Using an icing spatula, spread about 1/2 of the frosting evenly over the cake. Center the second layer on top. Wipe the spatula clean, then spread about 1/4 of the frosting in a thin layer over the top and sides of the cake. Wipe the spatula clean again, and spread the remaining frosting in a smooth layer over the top and sides of the cake. To make these, you need a 4 foot length of 7/8 inch wooden dowel rod (you can purchase this at any hardware store) and coals from a nice camp fire (not available at a hardware store....you have to make it yourself). Take one of the biscuits, put it on the end of the dowel rod, and stretch it evenly over the top 2 or so inches of the rod. Place the dough covered end about 6-8" away from the coals and slowly rotate the dowel rod, similar to roasting a marshmallow. Keep turning it until the dough browns evenly. When it is done, the biscuit should pull cleanly off the end of the dowel rod. In a covered stockpot, bring the stock to a boil then reduce the heat to low and simmer. In a large saucepan on medium heat, cook 2 tablespoons of butter and the olive oil until sizzling, about 2 minutes. Add the onion, stir well and cook for two minutes. Reduce the heat to low and add the garlic, stir well and cook for 4 minutes. Raise the heat to medium-high, add the mushrooms, and 1 tablespoon of the parsley and cook for 3 minutes, stiring to prevent sticking. Add the wine and deglaze. Make sure you dislodge all the brown bits that might stick to the bottom of the pan. Cook for 2 minutes. Add the rice, salt and pepper and stir until all the wine has evaporated, about 2 minutes more. Add 3 cups of the simmering stock and bring to a boil, stiring continuously for 2 minutes. Reduce the heat to a low simmer, cover the saucepan and let the rice cook 15 more minutes. Stir the risotto. Raise the heat to medium and add 1/2 cup of simmering stock, stiring well until it is all incorporated. continue adding the simmering stock 1/2 cup at a time, and stiring well until all the risotto is cooked, about 5-8 minutes. Taste the rice with each addition of the stock it is perfectly cooked when tender to the bite. Don't worry if you haven't used all the stock. Turn off the heat, optionally add cream and butter, the rest of the parsley, the cheese and 1/2 cup of remaining simmering stock. Mix well and let the risotto rest for 3 miutes. Serve on a plate or deep pasta bowls. Pair with a Pinot Grigio and a crisp Italian salad.

Preheat oven to 350 degrees, Grease and flour a bundt pan. Blend all cake ingredients except nuts well. Beat for a couple minutes, add nuts; mix well. Pour batter into prepared bundt pan. Bake for 50 to 60 minutes. Cool 15 minutes; remove from pan, cool on rack. Split cake into 2 layers. Spread, frosting between each layer. I then frost the outside of the cake and garnish with more nuts. If you want a 3 layer cake and to be able to frost the layers and the outside I use 3 packages of Dream Whip, 3 packages of Pistachio Pudding adn 4 1/2 cups of millk. We like a lot of frosting.

Whisk in flour, salt, pepper, mustard, cayenne and Worcestershire sauce. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. 3. Remove from heat, stir in cream, garlic, onion powder. Heat to boiling, stirring constantly. Boil for 1 minute, stirring constantly. 4. Remove from heat, stir in both cheeses, cream cheese and cook, stirring occasionaly, until cheese is melted. 5. Drain macaroni and gently stir into cheese sauce. **Eyeball all the ingredients. I don't measure stuff, so if it doesn't look right, it probably isn't** I cooked this in a big cast iron stew pot, which definitely added to the flavor. If you just have a skillet, just cook as much as you can in it and then transfer it into something bigger. Heat the Olive Oil and saute the Onions and Garlic till they just start to turn translucent. Toss in the sliced Sausage, wait a few minutes, and then add the Asparagus. Cook until the sausage turns a nice brown and the onions have caramelized just a little bit. Dredge in Flour. Add the Beer and boil all the alcohol out of it. Don't worry, there's 5 more in the six pack. Turn the heat down so it's not actively boiling but it's still hot. Add the mustard, mix it up nice and good. Add the warmed Milk slowly.
