Sauté bacon pieces in fry pan until crispy and remove from pan with a slotted spoon. Sauté onion, bell pepper and jalapeno pepper until tender. In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time) Place in a 220-250° smoker for 2 1/2 – 3 hours (make sure temperature of the baked beans reaches 160° ) or place in a 350° oven and bake for 1 hour.

Melt butter or margarine in saucepan. Blend in flour, 1 tsp salt, pepper and paprika. Gradually add milk and cook on a medium heat until thickened. Combine 1 tsp salt, onions, potaotes and water in saucepan. Turn to a high heat until steaming, then to a lower heat and cook for 10 minutes. Drain. Arrange 1/3 of potato-onion mixture in greased 1-1/2 quart casserole. Sprinkle with 1/3 of parsley and pour 1/3 of sauce over potatoes and onions. Repeat two more times. Preheat the oven at 375 degrees. While the macaroni noodles are cooking in boiling water, bring the milk to ebulition point at low heat in a saucepan, adding one by one the cheese slices, stirring often until you get the thickness you want for your sauce. Heat the olive oil in a pan, add the onions and the ham, cook until the onions are transparent. Drain the macaroni and mix with the sauce, the onions, the ham, the parmesan, the rosemary, the salt and the pepper. Pour everything in a baking dish, spread the grated cheese all over it and bake it in the oven until you get a nice golden crust.

Preheat oven to 325 degrees F. Grease cookie sheets or line with either parchment paper or silicon baking pads (e.g., Silpad). Sift together the flour, baking soda and salt; set aside. In a medium bowl, cream together the melted butter, brown and white sugars until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Slowly incorporate the flour mixture until just blended. Stir in the chocolate chips. Chill the dough, then drop 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly browned. Check the cookies after 7 or 8 minutes and rotate the baking sheet for even browning. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely. Store in an airtight container. Make Ahead Note: If you want to have ready-to-bake cookies, you can drop cookie dough onto baking sheets covered with wax paper or parchment paper and place in the freezer until the dough is firm. Then, place frozen cookie dough in a plastic bag and keep frozen until ready to bake. Expect the frozen cookies to take a little longer time to bake than normal.

In a pot, boil green beans until tender. Cook pasta al dente in another pot. Chop tomatoes and put in a ziploc bag with 1 tsp garlic and 1 tsp lime juice. When green beans are done, add them to the ziploc and shake it all together. Pour mix over drained pasta and stir together. When chicken is cooked, slice it into strips and place on top of pasta on plates. Sprinkle with parmesan cheese if desired.

Heat an 8- or 9-inch heavy-bottomed nonstick skillet over the lowest heat on your stove for about 5 minutes (if using gas, you should barely see the blue flame). Break open each egg onto a separate saucer, taking care not to break the yolk and removing any shell fragments. Add the butter to the skillet and let it slowly melt and gently foam, don't let it sizzle (if the butter doesn't foam the pan is too cool -- if the butter browns the pan is too hot). When foam subsides (about 1 minute), swirl to coat the skillet. Gently slide each egg off their saucer into the hot butter. Quickly season eggs with salt and pepper to taste, cover skillet and cook. The whites will gradually solidify from transparency into snow-white cream; the yolks will thicken slightly as they heat. Cook for about 2 to 2 1/2 minutes for runny yolks, 3 to 3 1/2 minutes for soft but set yolks, and 4 to 4 1/2 minutes for firmly set yolks. Do not flip the eggs but leave the egg sunnyside up and natural. When your eggs are is done, slide each egg onto a small serving plate and serve immediately with crispy bacon and simple buttered toast...

Tie the fillet with butcher twine at 1/2-inch intervals. Rub the fillet with salt, pepper, sage, and oil. Spread coffee over a work surface and roll fillet in it to coat. Marinate fillet for 30 minutes. Heat a skillet over medium high heat and add 1 tablespoon butter. Add onion and garlic and sautJ until browned. Add the Pasilla chile and saute. Add stock, chipotle, and adobo sauce and simmer, cover, for 10 minutes. Remove from heat and let cool. Transfer ingredients to a blender and pure for 30 seconds. If needed, add enough water to make 2 cups. In a clean skillet melt remaining butter and add mushrooms and sage and sautJ, stirring, until lightly browned. Add sauce and scrap the bottom of the skillet with a spoon to deglaze the mushroom juices. Bring the liquid to a boil then simmer for 10 minutes. Add salt, pepper, and maple syrup. If sauce becomes too thick, thin with water. Preheat oven to 400 degrees. Roast fillet on a roasting rack on a roasting pan for 10 minutes. Reduce oven temperature to 250 degrees and cook the fillet for about 20 minutes more or until the meat registers 125 degrees for medium rare or 135 degrees for medium meat on a meat thermometer. Serve with slices of fillet over cheddar-cheese grits and garnish with oil and sage. Roast Pheasant with Bacon, Potatoes and White Wine

Put the bird in a roasting tin. Smear with the butter, dot with thyme sprigs, a few grinds of salt and black pepper, then wrap the rashers of bacon over the breasts and tuck the ends underneath. You need not Make too much of this; we want them to curl up and be interesting. Pour the wine into the tin, add the potatoes and place the bird in a hot oven (190?C/375?F/Gas 5) for thirty minutes. Remove the bacon from the bird (it will crisp in the tin), drop in the mushrooms, cut into four or six if they are large, and return the bird to the oven for further fifteen to thirty minutes. A large cock will take about fifteen minutes more than a hen. The bird's juices will have soaked into the potatoes, but there may be a little impromptu gravy. The bird will be moist, you won't want much. Remove from the oven and leave to settle for five or ten minutes. If you feel like carving the bird then do so, though you could cut the pheasant into four with a heavy knife or game scissors (I do not know anyone who actually owns such things, but they are very useful), then pour over any juices from the pan. Some crusty white bread and a few soft salad leaves, such as mache, or better still watercress, would make adequate accompaniment.

Heat a tablespoon of the olive oil in a deep saucepan. Quickly fry the chorizo until coloured and the oils have been released. Reduce the heat slightly, stir in the onion and cook for a few minutes until it begins to soften. Rinse and drain the cannellini beans and add them to the onion in the pan. Add the tinned tomatoes with their juice and top up with half a tin of water to loosen the sauce. Simmer gently for 10 to 15 minutes. Meanwhile, season the chicken with salt and pepper. Heat a separate frying pan with the remaining olive oil. Fry the chicken until golden brown and firm to the touch (approx 6 to 7 minutes). Add the chicken to the casserole. Season with salt, pepper and the sugar before serving.

1. Grease a deep 20cm-round cake pan then line with baking paper 2. Combine butter, chocolate, sugar and milk in medium saucepan, stirring over low heat until smooth. 3. Transfer to a large bowl and allow to cool for approximately 10 minutes 4. Meanwhile pre-heat oven to 150 degrees celsius (fan-forced) 5. Whisk flour, vanilla and eggs into mixture. 6. Pour into pan 7. Cover with foil and bake for 45 minutes 8. Remove foil and bake for a further 15minutes 9. Allow cake to cool in pan for 30 minutes, then turn onto wire rack to cool. 10. Make white chocolate ganache by bringing cream to boil in small saucepan then pouring cream over chocolate in a small bowl. Stir until choclate melts. 11. If you want beautiful runny topping pour over cake now. For a thicker spread cover and regrigerate for approximately 30 minutes.

Pre-heat oven to 400° F. 8” x 12” Baking Dish Spray greased with cooking oil or spray shortening. BOTTOM CRUST: in a dish, cut up the cold margarine, with a fork mix it with the Bisquick Mix until it becomes like crumbs. Slowly mix the milk until it turns into a ball. Place ‘bottom crust’ ball inside dish and spread out in bottom of dish. Bake for 6 to 8 minutes. CASSEROLE FILL: Sauté the chopped onion with a tablespoon of olive oil in microwave for 1 minute. In a large bowl place the cream of mushroom soup, sautéed onions, drained vegetables and diced chicken. Mix thoroughly with Salt and Pepper to taste. Place this mix over the bottom crust inside the baking dish. TOP CRUST: Mix 1 cup of Bisquick Mix, egg and milk and stir with a mixing wire-whisk. Let it rest about 5 minutes the pour over the chicken filling and bake for 30 minutes (until golden brown). 15 minutes into the process make some slits with a sharp knife on upper crust and continue baking until finished. Take out and let it rest at least 20 minutes before serving.

Preheat oven to 450 degrees F. Prepare the chicken by halving and then halving again lengthwise. (Whole chicken breast are a bit too big. Making smaller pieces ensures that the coating will not burn before the chicken is cooked through.) Pound to about 1/2 inch thick. Blend the egg whites, cornstarch, and lemon juice with a fork in a wide, shallow dish; set aside. Combine the bread crumbs, parmesan, parsley, salt, pepper, and zest in a second wide, shallow dish. To crust the chicken breasts, dip each in the egg white mixture and then roll in the bread crumbs. Then transfer the chicken to a rack set over a baking sheet. Air-dry the chicken for 20-30 minutes to help set the crumbs. To cook, first saute the chicken on the stove in an ovenproof skillet. As you put the chicken in the pan, lay it towards you. This way each piece will rest on top of any crumbs that fall off. Saute until the chicken is golden and crisp on one side, then carefully flip the pieces over. Cook until golden. Finally, transfer the whole pan to a 450 degree oven to finish. Cook for 8 to 10 minutes in the oven. If you are serving this with Sage-Butter Sauce and Roasted Potatoes with Garlic and Rosemary, begin roasting the potatoes while the chicken is air drying on the rack, then prepare the sauce and keep it warm in a warm water bath. It will hold just fine for at least an hour. For the Sauce - saute the shallots in butter in a small saucepan over medium heat until soft, 2 - 3 minutes. Add the wine, cream, broth and lemon juice. Simmer until reduced by half, 8 - 10 minutes. Whisk in butter, 1 Tbl at a time, stirring constantly. Do not add more butter until previous addition has melted completely. Finish sauce with sage and seasonings. Keep warm in a warm water bath until ready to serve. The Roasted Potato recipe is listed seperately.

Cut the well-marbled sirloin beef into very thin slices, or have your butcher do it for you. Buy grilled bean curd (yakidofu) or use any type of bean curd (tofu) available. Cut it into 1 1/2-inch squares as you arrange the platter. Cooking at the table: Put the empty sukiyaki pan or large cast-iron skillet over the heat source (or use an electric skillet) at the table. Start to melt suet in the pan over medium heat, using long chopsticks (or a fondue fork) to move it around so the entire pan bottom is well greased. The fat should smoke slightly. Quickly sprinkle about 3 tablespoons of sugar over the bottom and continue moving the fat in the pan (it should not be entirely melted yet). The sugar will caramelize, turning brown and sticky. At this point, add about 1/4 cup water and 1/4 cup sake. There will be some sputtering (but this helps entertain guests). Add sake, stir; add dark soy sauce, stir. Begin the cooking by laying a few slices of beef into the pan. The beef should take about 1 minute to cook. Add more beef, switch to vegetables -- including shirataki, tofu and fu -- then alternate back to beef. Each diner should put into the pan whatever he or she likes. Add water (or half water/half sake) to the pan occasionally, as the sauce is reduced. The ingredients should not swim in the sauce; the liquid should just keep the pan bottom covered. Set each place with an individual dipping bowl into which an egg has been broken. This alone is the dipping sauce. (If you serve a whole egg at each place, which is attractive, provide a saucer or some vessel for the empty shells.) Each diner mixes the egg with chopsticks or fork. As with the other nabemono, long-handled fondue forks are best for anyone who is a little shy about using chopsticks, but dinner forks will do in a pinch. Before eating, dip cooked meat and vegetables into the egg; the thin coating of egg "cooks" on as soon as it is in contact with the hot food. There is no other garnish or relish. To end the meal, serve hot cooked rice, mild pickles, and Japanese tea as a final course. Serve hot sake or cold beer up to the rice course. Mix sugar, salt, cinnamon, ginger, and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell. Bake for 15 minutes. Reduce temperature to 350 degrees; bake for 40-50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving for best results! Do not overcook - overcooking leads to pie cracking in the middle. Try to bake the day you will serve the pie. PREP WORK Get your grill really hot. While that is happening, finely chop your shallots and slice your mushrooms. Have your red wine and demi glace or substitute ready to go Prepare Steaks: Preheat your grill until it’s really hot. Season the steaks with a little salt and pepper. The meat should be cooked approximately 3-4 minutes per side depending how you like your steaks. When done, slice the steaks into 1/4 inch strips, fan out on a warm plate and add your wild mushroom sauce. Prepare Wild Mushroom Sauce: Demi-Glace Gold comes with easy instructions, but here’s how I make it. Melt butter in a sauce pan and sauté shallots until transparent, approximately 2-3 minutes. Add red wine, preferably something you may be sipping while you are preparing this meal. Don’t use plain old cooking wine, big mistake. Add mushrooms and cook until tender and wine has reduced to an essence. Add Demi-Glace Gold and stir (with a whisk if you have one) until dissolved. Add hot water and simmer until the sauce has thickened, approximately 8-10 minutes. Salt and pepper to taste and serve over the steaks (and mashed potatoes).

Preheat oven to 425F. Stew 4 of the garlic cloves, peeled, in about 1/4 cup Olive Oil for 10 minutes. Remove the garlic and reserve. While the garlic is stewing, scrub the potatoes and chop into approx. 3/4-inch pieces. Bring to a boil starting with cold salted water, boil for 5 minutes, and drain. Return potatoes to pot, gently toss with garlic oil, 1/2 tsp salt, and 1/2 tsp freshly ground black pepper. Dump potatoes and oil into a nonstick 13x18 baking dish and roast for 30-40 minutes, shaking the pan and/or turning the potatoes occasionally so that they brown evenly. While the potatoes are cooking, finely chop as much of the reserved stewed garlic as you want to use. When the potatoes come out of the oven, toss them in a bowl with the garlic, parsley, lemon zest, a little more Olive Oil, and salt and pepper to taste. Optional: Add 1 clove of minced raw garlic at this point for another layer of garlickiness.

In a saucepan over high heat, combine the water and 1 teaspoon of the salt and bring to a boil. Add the garlic, chilies and tomatillos and cook, uncovered, until soft, 8-10 minutes. Drain, reserving 1/2 cup of the liquid. When cool enough to handle, stem the chilies and tomatillos. In a blender or in a food processor fitted with the metal blade, combine the garlic, chiles, tomatillos, reserved liquid, cilantro and remaining 1-1/2 teaspoons salt. Process to form a smooth puree, then transfer to a bowl. Stir in the chopped onion. Let the salsa cool to room temperature, then serve. The salsa can be stored tightly covered in the refrigerator for up to 1 week. Found on most tables in Mexican homes and restaurants, this versatile condiment enhances any savory dish. It is made with tomatillos, which are known in Mexico as tomates verdes; and although they arent, in fact, related to tomatoes, their size, shape and texture are similar. Youll find them fresh, covered in their brown papery husks, in ethnic markets, well-stocked food stores, or in fruit and vegetable shops; they are also sold canned. 1. Make a deep slit in the side of each chicken fillet to form a pocket. 2. To make filling, combine ricotta, basil and black pepper to taste. Fill pocket in fillets with filling. Secure with toothpicks. 3. Heat oil in a large frying pan. Add onions and garlic and cook, stirring, for 3 minutes or until onions are soft. Add tomatoes, capsicum and wine to pan. Cook, stirring, for 2 minutes. 4. Add chicken to pan. Cover and simmer, turning chicken occasionally, for 30 minutes or until chicken is tender. 1. Place turkey breasts in a large baking pan. In a small bowl combine coriander, paprika, turmeric, cumin, cayenne, cinnamon, gingerroot, olive oil, lemon juice, and yogurt. Spread over top of turkey breasts. Cover pan with plastic wrap and refrigerate for 2 hours. 2. Preheat oven to 350 degrees F. Unwrap pan and place in oven; bake for 40 minutes, basting occasionally with pan juices. To serve, slice turkey, drizzle with pan juices, and garnish with green onions. 1. Dice pork. Boneless pork butt is an ideal cut, but an end of pork roast or a few pork chops will do nicely. 2. Shake pork in a ziplock bag with flour until pork is coated. 3. In heavy bottomed pot, saute diced pork in oil until lightly colored. Add diced onion and sweat until translucent. Add chopped carlic, cumin and coriander and saute briefly. Saute while stirring to cook roux. Add crushed red pepper, black pepper and chicken broth. 4. Stir until well blended and when mixture comes to a boil, cover and simmer twenty minutes. 5. Add green chilies, jalapenos, tomatoes and cilantro. Simmer until pork is tender, total cooking time approximately forty minutes. If pork is diced larger, slightly more cooking may be necessary. 6. Adjust seasoning to taste with salt 7. Pork green chili should be lightly thickened. If mixture has reduced and is too thick, add a bit more chicken stock or water. If mixture doesn't seem thick enough, add another tablespoon of flour and simmer. 8. Serve in small bowls with warm flour tortillas. For Huavos Rancheros, spread two flour tortillas with warm refried beans, fry, poach or scramble two eggs and place on top of beans, top with green chili, grated cheese, chopped onion, and a dollop of sour creem. Bake at 450 degrees for 10-13 minutes. While baking, make your choice of icing or glaze (see additional notes for two recipes). Drizzle icing over slightly cooled biscuits. Additional Notes: *Use less milk to hand-form biscuits; use more milk for drop biscuits. Classic Cinnamon Rasin Biscuit Icing/Glaze Recipe: 2 Tablespoons melted butter 1 1/4 cup powdered sugar water Mix together 2 Tablespoons melted butter and 1 1/4 cup powdered sugar. Add water until runny and stir out all lumps with fork. Drizzle icing over slightly cooled biscuits. I set the biscuits on a cooling rack so the excess icing will drip off. 1 pound und beef pork, chicken, turkey (or combination)
1 , slightly beaten
1 Cup ad crumbs
1 teaspoon lic powder
1 teaspoon dried sley
2 teaspoons dried il
2 teaspoons cestershire sauce
1/2 Cup grated mesan cheese (optional)
2 Tablespoon ve oil
6 Cups cken broth
2 Cups water
1 1/2 Cups pastina or other small pasta (or large pasta broken up)
1 (10 oz) package of frozen chopped spinach, thawed and ined

Combine meat, egg, bread crumbs, spices and cheese (optional) in medium sized bowl. Mix well. Shape into small meatballs ( use about 1 teaspoon of mixture per meatball ). Heat olive oil in large skillet. Saut meatballs over medium-high heat, turning often, until just done. (about 5 minutes) Do not overcook as the meatballs will get further cooking in soup. Set aside. Bring broth and water to boil in large saucepan or Dutch oven. Reduce heat to low. Add meatballs, pasta and spinach. Cover and simmer until pasta is done. (about 10 minutes). Makes about 8 servings.

1 teaspoon her salt
1/4 teaspoon Ground ck pepper
Zest of 1 lemon ced
1/2 cup mesan cheese grated
3 tbl. ve oil
Sage-ter Sauce
3 tbl llots minced
1/2 cup Dry te wine
1/2 cup Heavy am
1/2 cup cken broth
1 teaspoon Fresh on juice
4 Tbl Unsalted ter cold, cubed
1 teaspoon salt,te pepper,cayenne to taste
1 teaspoon Fresh sage ced

Preheat oven to 450 degrees F. Prepare the chicken by halving and then halving again lengthwise. (Whole chicken breast are a bit too big. Making smaller pieces ensures that the coating will not burn before the chicken is cooked through.) Pound to about 1/2 inch thick. Blend the egg whites, cornstarch, and lemon juice with a fork in a wide, shallow dish; set aside. Combine the bread crumbs, parmesan, parsley, salt, pepper, and zest in a second wide, shallow dish. To crust the chicken breasts, dip each in the egg white mixture and then roll in the bread crumbs. Then transfer the chicken to a rack set over a baking sheet. Air-dry the chicken for 20-30 minutes to help set the crumbs. To cook, first saute the chicken on the stove in an ovenproof skillet. As you put the chicken in the pan, lay it towards you. This way each piece will rest on top of any crumbs that fall off. Saute until the chicken is golden and crisp on one side, then carefully flip the pieces over. Cook until golden. Finally, transfer the whole pan to a 450 degree oven to finish. Cook for 8 to 10 minutes in the oven. If you are serving this with Sage-Butter Sauce and Roasted Potatoes with Garlic and Rosemary, begin roasting the potatoes while the chicken is air drying on the rack, then prepare the sauce and keep it warm in a warm water bath. It will hold just fine for at least an hour. For the Sauce - saute the shallots in butter in a small saucepan over medium heat until soft, 2 - 3 minutes. Add the wine, cream, broth and lemon juice. Simmer until reduced by half, 8 - 10 minutes. Whisk in butter, 1 Tbl at a time, stirring constantly. Do not add more butter until previous addition has melted completely. Finish sauce with sage and seasonings. Keep warm in a warm water bath until ready to serve. The Roasted Potato recipe is listed seperately.

In a large saucepan, combine the 3 cups of water, salt, cinnamon sticks, gloves, and ginger. Bring to a boil. Pour the liquid through a colander into a bowl; discard the spices. Combine the spiced water with the coconut milk and 1 cup of water in a large saucepan. Bring the liquid to a boil. Add all the remaining ingredients except the cinnamon. Reduce the heat, cover, and simmer for 20 minutes. Remove the lid from the pan, stir, and cook for 15 minutes, or until the rice is cooked. (All the liquid should be absorbed) Pour onto a platter and sprinkle with cinnamon. NOTE: For a fruity variation, add 1 cup of diced mango during the last 5 minutes of cooking.

For Dail and any one else that wold like some fillings for Cream Puffs. These came out of "My Familys Favorites" cook book. I have made them and they are good. Make pudding as package directs, using 1 1/2 cups milk. Pour into medium bowl; place waxed paper directly over surface. Refrigerate until chilled. In small bowl, combine heavy cream, sugar, and vanilla; with rotary beater, beat just until stiff. Then fold whipped-cream mixture into pudding. Refrigerate at least 1 hour. Top with remaining whip cream, caramel topping and pecans just before serving.

In a nonstick skillet coated with nonstick cooking spray, sauté onion and green pepper until tender. Add beans; heat through. Spoon about 1 cupful off center on each tortilla. Sprinkle with cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with salsa if desired.

1/2 cup wine
1/4 cup sauce
1 tablespoon on juice

Use a large saute pan (4 - 6 quart sized). Heat 2 tablespoons oil with 2 tablespoons garlic over med heat until the oil is rippling. Add chicken to the pan and cook for about 5 minutes until almost cooked through (still rare). Add chopped onion, basil, wine, and soy sauce and continue cooking for about 3 more minutes. Add more wine if you want and let reduce until the liquid starts to thicken. Add the sugar snap peas, spinach, wine, soy sauce, lemon juice. Pour the remaining 2 tablespoons of oil over the spinach. Salt and pepper to taste. Cook until the spinach is just wilted (pay attention - the spinach will cook quickly). Remove from heat immediately and serve.

12 oz isweet chocolate chips
1/4 c rtening
1/4 c Light n syrup

CUSTARD FILLING: In medium saucepan heat milk slowly just until bubbles form around the edge. In small bowl, combine sugar and cornstarch, mixing well. Stir into hot milk all at once. Cook, stirring, over medium heat until mixture boils. Reduce heat and simmer 1 minute. Beat a small amount of mixture into egg yolks. Pour back into saucepan and cook, stirring, over medium heat until mixture boils and thickens. Stir in vanilla. Place waxed paper on surface to prevent skin from forming. Refrigerate until ready to use. Makes 3 cups. Will fill 12 eclairs. GLAZE: In top of double boiler, over hot (not boiling) water, melt chocolate with shortening. Add corn syrup and milk. Stir until smooth and well blended. Let cool slightly. Spread glaze over eclairs. Makes 2 cups. Will glaze 12 eclairs. ECLAIRS: Bring water, butter and salt to boil. Remove from heat and stir in flour. Beat over low heat until mixture leaves sides of pan. Remove from heat. Beat in eggs, one at a time. Beat until shiny and satiny and broken in strands. Drop three inches apart on ungreased sheet. Form 12 strips 4 x 1 inches. Bake at 400F for 35 to 40 minutes. (Will sound hollow when tapped, keep from drafts). Slit tops of eclairs and fill with custard. Spread tops with chocolate glaze, chill and serve. NOTES : Ive been making these since 1973. They are wonderful. Brownies - melt butter and chocolate in a double boiler and let cool. Grease a 9” x 13” pan. Mix 1 1/2 cups sugar, 2 eggs, water and 1 teaspoon vanilla until smooth. Add cooled chocolate mixture. Stir in sifted flour. Pour 1 of brownie mixture into pan. Beat cream cheese, 2 eggs and 1/2 cup sugar until creamy. Add chips and spread gently over brownie batter in pan. Spread remaining brownie batter on top of cream cheese layer. Bake in pre-heated oven at 350 degrees for 40 minutes. Frosting - melt butter and chocolate. Add honey and 1/2 teaspoon vanilla until blended. Add powdered sugar and milk and mix until smooth. Drizzle over the top of cooled brownies.
